This is a tasty salsa that is always a hit at parties!

Healthy, tasty sweet salsa with a spicy kick!

Ingredients

  • 1 cup green onion, chopped
  • 1 cup green bell pepper
  • 1 sm jar canned pimentos
  • 1 sm jar jalapeno pepper, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 can canned pinto beans
  • 1 can canned shoepeg corn
  • 1 can black-eyed peas
Dressing
  • 3/4 cup olive oil
  • 1/2 cup cider vinegar
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Recipe Method

1- Mix dressing ingredients in saucepan and bring to boil then cool.

2- Combine all ingredients with dressing in large bowl, refrigerate minimum 4 hours.

3- Drain ingredients before serving. Serve with corn chips.

Keeps well in refrigerator for several days.

Leftover can be used with scrambled eggs or chicken.
