With maple syrup season quickly approaching - this is a delicious way to enjoy maple syrup. My friends and family fully agree.
1- Beat eggs only until yolks and whites are well blended.
2- Beat in sugar and salt - add vinegar and maple syrup. Mix well and add melted butter and nuts or raisins.
3- Line muffin tins with pastry and fill 2/3 full.
4- Bake at 450F for the first 10 minutes and then reduce temperature to 350F - and bake for another few minutes - watching carefully - as not to burn them.
Let cool and serve.
