Whole Wheat Oatmeal Griddle Cakes

A healthy pancake for breakfast or dinner.

This is a healthy alternative to pancake mix and takes just as long to mix up. Add some strawberry jam or syrup to top it off.

Ingredients

  • 1/2 cup whole wheat flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup quick cooking rolled oats
  • 1 eggs lightly beaten
  • 1/2 cup plain non-fat yogurt
  • 1 banana mashed
  • 1/2 cup brown sugar packed

Recipe Method

1- Combine flour, baking powder, and salt in a medium bowl. Mix with whisk or sift together. Add oats.

2- Combine wet ingredients in a separate bowl.

3- Gently mix into dry ingredients. Do not over mix because the flour will get tough.

4- Heat griddle over medium heat. Spray pan with oil. Scoop about 1/4 cup of the mixture onto the griddle. Cook for a 4-5 minutes until golden brown on one side (turn heat down if they are getting brown too quick). Flip and cook until golden brown, approximately 3-4 minutes.

Serve with jam or syrup.
