  • 11 tsp flour, cake, white, enrich, unsifted
  • 4 3/4 tbsp sugar
  • 1 tbsp cornstarch
  • 170 ml egg whites, raw
  • 1/2 tsp cream of tartar
  • 1 tsp salt, table

Recipe Method

1. Preheat the oven to 190C. Perpare 1 8" round clean angel food tin. 2. Sift cake flour, first part of sugar and cornstarch together and set aside. Put egg whites, cream of tartar and salt in a clean mixing bowl, and whip on high speed to a soft peak while adding sugar gradually. 3. Fold in sifted flour gently, until mix is free of loose flour. Pour the mixture into the angel food tin and bake at 190C fro 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean. 4. Turn tins unpside down on wire rack for 1 hour before removing cakes from tin. Take out and dust with icing sugar, serve.

To make Chocolate Angel Food Cake, reduce flour to 9 teaspoon and add 2 teaspoon of cocoa powder. A great twist on the original!
