Chocolate Sushi

A Gourmet Desert...

Andirawks did mention in a later comment that this was a trial run - and that the next time the chocolate would be rolled out thinner. Other than this change, she was quite pleased with her first attempt.

Ingredients

  • 4 cup baking chips, milk chocolate
  • 1/2 cup corn syrup
  • 4 cup marshmallows, miniature
  • 1 cup dried coconut
  • 1 fresh apple diced
  • 1 banana peeled and diced
  • 8 strawberries diced

Recipe Method

1- Cover a large baking sheet with plastic wrap and set aside.

2- Over a double boiler, melt chocolate chips with corn syrup until mixture is totally melted and pliable. Once melted, pour mixture onto baking sheet and smooth evenly over the entire sheet. Place sheet in freezer for 30 minutes.

3- While the chocolate is cooling, chop marshmallows into small bits and set aside.

4- Once cooled, remove chocolate from freezer. One ingredient at a time, cover chocolate with the marshmallow and coconut leaving about 2 inches at one end uncovered. Add the banana, strawberries and apples down the center of the sheet.

5- Starting at one side, carefully roll the chocolate over the fillings like a sushi roll. Make sure you roll tightly! Once rolled, return the roll to the freezer for an additional 30 minutes to cool.

6- Once cooled and set, remove the roll from the freezer. To serve, slice the roll with a sharp knife and serve like pieces of sushi. Drizzle with chocolate sauce (soy sauce!) just before eating.

Feel free to use whatever fresh berries or fruit you like for the filling. They're all good!
