Robert's Shepherd's Pie

A favourite for kids.

Light, flavorful. The kids love it. There are no peas in it like the typical Shepherd's pie. That makes everyone, including mummy who hates peas, happy!

Ingredients

  • 2 pound extra lean ground beef
  • 1 cup beef stock
  • 1 tbsp olive oil
  • 1 white onions chopped
  • 2 bay leaves
  • 1 cup canned corn
  • 3 carrots diced
  • 2 tsp worcestershire sauce
  • 2 tbsp all purpose flour
  • 2 tbsp unsalted butter
  • 1/2 cup milk
  • 6 medium fresh potatoes
  • 1 tsp paprika

Recipe Method

1- Boil potatoes until soft.

2- Place oil in frying pan. Saute meat and onion until browned. Add bay leaf, bouillon, carrots and flour. Cook 5-7 min on simmer until thickened.

3- Add corn and worcestershire sauce. Salt and pepper to taste.

4- Meanwhile, mash potatoes with butter and milk and whip with hand mixer until fluffy.

5- Place meat mixture in 9x9 inch pan and top with potatoes. Sprinkle paprika on potatoes.

6- Bake at 350 degrees for 30 minutes until potatoes lightly browned.
