These are a real pain to make, but they are worth it. The best ginger cookies I have ever eaten.

Ingredients

  • 3/4 cup unsalted butter
  • 1 cup brown sugar
  • 1 eggs
  • 1/4 cup molasses
  • 2 1/4 cup all purpose flour
  • 1 1/2 tsp fresh ginger finely chopped
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 ounce-weight crystallized ginger finely chopped

Recipe Method

1- Cream butter and brown sugar in a large mixing bowl. Beat in molasses and egg.

2- Mix flour, ground ginger, baking soda, and salt together. Mix into butter mixture with a wooden spoon. Stir in fresh and crystallized ginger. Cover and refrigerate dough for at least 2 hours or overnight.

3- Preheat over to 350F. Shape dough into 1-inch balls and place on an ungreased cookie sheet. Bake for 10 minutes, or until lightly browned. Cool on wire racks.
