Creamy Mushroon & Chicken Pasta

A surefire pleaser for the big guy in your home.

A wonderful creamy cheesy sauce with chunks of roast chicken breast and sliced mushrooms. A sure people pleaser for anyone. The left overs are fantastic.

Ingredients

  • 2 cups dry fusili pasta, or your favorite
  • 2 boneless skinless chicken breast, grilled or pan fried, cut into bite sized pieces
Sauce
  • 2 tbsp unsalted butter
  • 2 stalks celery, diced
  • 1 medium white onions, diced
  • 1 can cream of mushroom soup
  • 1/4 cup sour cream
  • 8 white mushrooms, sliced
  • 1 large fresh tomatoes, diced
  • to taste salt
  • to taste black pepper
  • 1/4 tsp cayenne pepper
  • 2 cup shredded cheddar & mozzarella cheese
  • 1/2 cup bread crumbs, for topping
  • 1/2 cup grated parmesan cheese, for topping

Recipe Method

1- Cook pasta till al dente - keep for steps 2 & 3.

2- Saute celery and onions in 2tbls of butter, add soup and milk. Add sour cream and cheese. Do not over heat. Just melt the cheese and keep warm.

3- Mix in diced chicken and sliced mushrooms along with diced tomato and if you like use some frozen peas too for colour.

4- Assemble all ingredients together and mix well.

5- Put into 8x8 baking dish and top with bread crumbs and parmesan. Dot with a wee bit of olive oil to make it extra special.

Bake covered at 350 F. for 30 min. Uncover and bake for 15 min at 400 F.
Serve with nice greens and buns and enjoy!
