A wonderful creamy cheesy sauce with chunks of roast chicken breast and sliced mushrooms. A sure people pleaser for anyone. The left overs are fantastic.
1- Cook pasta till al dente - keep for steps 2 & 3.
2- Saute celery and onions in 2tbls of butter, add soup and milk. Add sour cream and cheese. Do not over heat. Just melt the cheese and keep warm.
3- Mix in diced chicken and sliced mushrooms along with diced tomato and if you like use some frozen peas too for colour.
4- Assemble all ingredients together and mix well.
5- Put into 8x8 baking dish and top with bread crumbs and parmesan. Dot with a wee bit of olive oil to make it extra special.
Bake covered at 350 F. for 30 min. Uncover and bake for 15 min at 400 F.
Serve with nice greens and buns and enjoy!
